Vendakka Paal Curry
Vendakka paal curry is a mildly spiced, delicious Kerala dish prepared by cooking okra with coconut
milk and spices. It is a quick and easy curry that goes well with rice, roti or appam.
INGREDIENTS
- 20 okra, washed and cut into 2 inch pieces
- 1 sprig curry leaves
- 1 1/2 tablespoons lemon juice
- 1/4 cup thick coconut milk
- 2 cups thin coconut milk
- 1/2 teaspoon chilli powder (or as per taste)
- 1/2 teaspoon turmeric powder
- 3 green chillies, vertically slit
- 1 piece ginger, inch long, sliced
- 1 medium onion, sliced
- 2 1/2 tablespoons coconut oil
FOR TEMPERING
- 1/2 teaspoon mustard seeds
- 2 shallots, round sliced
- 1/2 teaspoon fenugreek seeds
- 1 sprig curry leaves
- 1 teaspoon oil
DIRECTIONS
- Oil fry okra until slightly wilted. Keep aside
- Add and fry sliced onions, ginger and green chillies until translucent.
- Add curry leaves, okra, turmeric powder and chilli powder and sauté.
- Add thin coconut milk and salt. Cover the pan and cook for 4-5 mins.
- Add lemon juice and thick coconut milk. Stir well and stop flame.
- Prepare a tempering with mustard seeds, fenugreek seeds, shallots, curry leaves and pour it over
- the curry.
- Serve vendakka paal curry warm with rice, roti or appam.
